It doesn’t take Cinco de Mayo to realize that you need a solid, completely delectable queso recipe in your recipe repertoire! We created this recipe for the fine folks at Flying Dog Brewery for our spring 2017 Cooking with Beer classes, and man oh man did our students gobble it down! Forget the processed cheese food (what is that stuff anyway?) and use some really great Monterey Jack cheese that you shred yourself and BOOM! Queso magnifico!

Flying Dog Numero Uno Queso Dip

Serves 6ish

  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3/4 cup milk
  • 1/2 cup Flying Dog Numero Uno
  • 3 cups freshly shredded Monterey Jack Cheese
  • 1 4-ounce can green chilies (preferably Hatch)
  • 2 ounces cream cheese
  • 1/2 to 1 small jalapeno, fine dice
  • tortilla chips

Melt butter in a large saucepan over medium heat. Whisk in flour and cook for one minute, until well blended but not browned. Add milk, then whisk to combine. Add beer, then whisk to combine. Add cheeses and stir until melted. Add chilies and jalapeno. Season to taste with salt and pepper, then serve with tortilla chips. Ole!
