• Lemon-Tarragon Dip with Asparagus and Haricot Vert
• Salmon Rillettes
• Apple-Fennel Salad
• Crab Spring Rolls
• Spring Pea Pesto Crostini with Prosciutto
• Individual Banana Puddings

Techniques: Poaching, tempering eggs, making pesto, using a mandoline, blanching vegetables.
